Sadly there is nothing really much you can do about it - the sum is usually too small to warrant legal action. But to minimize your loses, start only on a small job (that doesn't involve too long a duration or too much money) for a new client. Make sure you are paid before taking on another job from the same client. If you are unlucky and he refuses to pay, use reminders and other means (like giving him bad publicity on the internet) to recover the debt but at certain point, you will have to give up, swallow the small loss and move on.
