Since most my work now a days is web development I like to use Linux with Apache. 
I find that running Linux just makes sense because when my code is deployed it is on a Linux box. I will say that I hate having to update the Linux kernel... I always have problems! Apache is the best. Easy to install and easy to use. What more can you ask for?
